Cocktail of the Week: Cucumber Mojito

I’m not usually a huge fan of mojitos – too minty – so the cucumber mojito came as a pleasant surprise.

The great thing about this recipe is that because of the taste and look of a cucumber, you can almost totally omit the mint if, like me, you’re just not a fan. And if you don’t like rum, you can substitute in gin and make a Cucumber Cooler – that’s TWO cocktails for the price of one this week. Don’t say I don’t spoil you.

Recipe

So, the mojito. You’re going to need:

5 slices of cucumber
60ml white rum
5-10 leaves of mint (or if you’re me, 2-3 leaves)
120ml sparkling water
1 tsp lime juice
1 tsp simple syrup or honey (to taste)

Muddle the cucumber, mint, and rumcucumber-mojito2
Add everything into a shaker with ice and shake the shit out of it
Pour into iced glass (via a strainer!)
Garnish with cucumber, mint, and/or lime
Enjoy
Repeat

The Cucumber Cooler version is simply the above but with gin substituting in for the rum.
